Black Beans and Rice

 Here is another one for you, Ray...

Saute together in large frying pan: (use about 1/4 cup chicken stock instead of oil)
1 cup shopped onion
1 cup chopped celery
1/2 cup chopped red pepper
1/2 cup chopped green pepper
salt and pepper to taste
Saute until tender crisp; then add 2 Tbsp curry powder and mix throughout.

Add :
1 can drained and rinsed black beans
2 cups cooked brown rice
1/2 cup sliced balck olives

Heat together.  If misture seems to dry add more chicken stock.

Serve with Tamori sauce sprinkled on top.
